Pork Scallopini With Garlic and Mushrooms |

Basic but tasty recipe Ingredients:
1 1/2 lbs pork tenderloin, sliced about 1 inch thick |
1/2 cup flour, sifted |
2 tablespoons butter |
2 tablespoons oil |
1/2 cup sherry wine |
1/4 cup water |
1/2 cup chopped onion |
1 garlic clove, minced |
1/4 teaspoon black pepper |
1 teaspoon salt |
1/4 teaspoon thyme |
1/4 teaspoon rosemary |
1/4 teaspoon oregano |
2 cups mixed mushrooms, sliced and fresh |
Directions:
1. Dredge pork in flour. In a hot skillet, brown meat in butter-oil combination. 2. Stir in sherry, water, onion, garlic, pepper, salt, herbs. 3. Cover and cook slowly 30 minutes, adding a little water if needed. 4. Add mushrooms and cook, covered 15 minutes longer. 5. (This recipe can also be used with veal, but reduce cooking time significantly.). |
