pork & sausage bake. Ingredients:
2 tablespoons corn oil |
2 tablespoons butter |
1 lb pork loin |
1 onion |
1 red bell pepper |
1 orange bell pepper |
4 ounces mushrooms |
3/4 cup long-grain rice |
1 3/4 cups beef stock |
8 ounces smoked sausage |
1/4 teaspoon allspice |
2 tablespoons chopped parsley |
Directions:
1. preheat oven to 350. 2. heat oil and butter in a large casserole. 3. add pork and cook over medium heat, stirring, for 5 minutes, until browned and then transfer to plate. 4. add onion and cook over low heat, stirring occansionally, for 5 minutes, or until softened. add the bell peppers and cook, stirring frequently, for an additional 4-5 minutes. add the mushrooms and cook for 1 minute, then stir in the rice. cook for 1 minute, or until the grains are well coated, then add the stock and bring to a boil. 5. return the pork to the casserole and the sausage and all spice and season to taste with salt and pepper. mix thoroughly, cover, and cook in the preheated oven for 1 hour or until all the liquid has been absorbed and the meat is tender. 6. serve immediately, garnish with chopped parsley. |
