Pork Sate With Peanut-Mirin Sauce |

From Cooking Light. You will need skewers for this recipe. If you use wooden skewers, soak in warm water for at least 30 min before using. Ingredients:
2 teaspoons lime rind, grated |
2 tablespoons lime juice |
1 tablespoon peanut butter |
2 teaspoons sugar |
2 teaspoons fish sauce |
1/2 teaspoon curry powder |
1/4 teaspoon salt |
1/4 teaspoon ground coriander |
2 garlic cloves, minced |
1 lb pork tenderloin, trimmed and cut into 16 4-inch long strips |
1 1/2 tablespoons sugar |
1 tablespoon fresh cilantro, chopped |
2 tablespoons rice wine vinegar |
2 tablespoons lime juice |
2 tablespoons mirin |
1 teaspoon fish sauce |
1 serrano chili, seeded and finely chopped |
1 tablespoon dry roasted peanuts, chopped |
Directions:
1. Prepare grill to med-high. 2. To prepare pork, combine first 9 ingredients in a medium bowl, stirring til smooth. Add pork to bowl; toss well to coat. Let stand at room temp 15 minute. 3. To prepare sauce, combine 1 1/2 T sugar and next 6 ingredients (through chile) stirring with a whisk. Stir in peanuts. 4. Thread 2 pork pieces lengthwise onto each of 8 12 skewers. Place skewers on grill; grill 3 min on each side or til done. Serve with sauce. |
