Pork Roast With Spicy Cranberry Compote |

We had this roast at a friends house. Very tasty. I have yet to make it but thought I would share. Roasting/baking time may take longer depending on how thick the roast is. Ingredients:
1 teaspoon chili powder |
1 tablespoon oregano |
1 teaspoon black pepper |
1 teaspoon cinnamon |
1 teaspoon granulated garlic |
1/2 cup orange juice |
1 1/4 cups whole cranberry sauce, canned |
1/4 cup hot sauce |
2 lbs pork loin roast |
2 tablespoons fresh cilantro, chopped |
1/4 cup dried cranberries |
1/2 cup monterey jack cheese |
Directions:
1. Preheat oven to 350°. 2. Make spice rub, whisk together until well combined. 3. Make spicy compote, whisk together. 4. Slice pork loin lengthwise almost all the way through, open like a book. 5. Place cilantro, dried cranberries and cheese in the middle of the roast. 6. Fold sides together and tie w/ butchers twine. 7. Spread rub on the outside of the roast. 8. Cover with compote. 9. Bake uncovered for approximately 45-50 minutes until internal temperature reaches 160°. A thicker roast may take longer. 10. Let rest for 15 minutes before cutting. |
