Pork Poblanos Beans and Bananas |

From a post-it I put in my kitchen cabinet. Since I have banana trees in my yard, I, frequently, have more than I know what to do with. Don't be afraid of the banana, you could even use those older ones. It is a good stretcher . Ingredients:
1 lb pork, minced (ground) |
1 onion, chopped |
1 teaspoon garlic |
2 poblano chiles, seeded and chopped |
1/2 cup tomato sauce |
2 cups beans |
4 bananas |
salt |
cumin |
coriander |
cardamom |
Directions:
1. If your pork is not ground, you can process it, alone, before adding everything else. 2. Place all in the food processor and blend. 3. This can be used several ways 4. Placed in wonton wrappers, sealed and steamed. 5. Cooked in a skillet and used in tortillas, dressed as you like. |
