I actually tweaked another recipe I found on here becuase I didn't have the ingredients not to mention that I'd prefer to bake instead of fry. Ingredients:
1 egg, beaten |
4 pork tenderloin |
italian seasoned breadcrumbs |
7 saltine crackers, crushed |
5 dashes ground ginger |
3 dashes ground sage |
parmesan cheese |
canola oil |
Directions:
1. Preheat oven to 350 degrees. 2. Mix bread crumbs, saltine crackers, ginger and sage in a bowl. Mix well. 3. Add parmesean cheese, enough to suit your liking, and mix well. 4. Pour onto a plate. 5. Put Canola oil in a baking dish. 6. Dip pork tenderloin in beaten egg. Let extra egg drip off. 7. Put tenderloin in the bread crumb mixture and cover well. 8. Place Tenderloin in baking dish. 9. Place in oven and cook until top/sides are golden brown. Turn over so both sides are crispy. Cook until juices run clear. |
