Ingredients:
4 ounces guava jelly (i like the goya jelly) |
2 limes, juice of |
minced jalapeno |
1 tablespoon minced ginger |
1/4 cup rough chopped cilantro |
4 slices bacon |
2 lbs boneless pork loin |
kosher salt |
pepper |
1 pineapple |
2 red bell peppers |
Directions:
1. cut pork, pineapple, and bell peppers into 1 inch cubes whisk together first 5 ingredients in a bowl cook bacon through, but not until it gets crispy cut into 1 inch slices thread bacon, pork, pineapple, and peppers onto skewers grill, basting kebabs with the jelly mixture. |
