TURN ONE POUND OF PORK CHOPS INTO A FABULOUS, FILLING MEAL FOR SIX WITH EGGS, ASSORTED FRESH VEGGIES, RICE AND A TASTY ORANGE-FLAVORED SAUCE. Ingredients:
1/2 cup orange juice |
1/3 cup lower sodium soy sauce |
1tbs light brown sugar |
1 tbs cornstarch |
1/4 tsp salt |
2 pork loin rib chops, 1 lb, boned and sliced |
2tbs oil |
2 eggs beaten |
2 cloves garlic, thinly sliced |
1 red or green pepper, sliced |
3 cups cold cooked rice |
1 head broccoli, florets, trimmed, stems peeled and sliced, 6 cups |
Directions:
1. WHISK TOGETHER ORANGE JUICE, SOY SAUCE, SUGAR, CORNSTARCH AND SALT. TOSS 2 TBS SPOONS JUICE MIXTURE WITH PORK; RESERVE HEAT1 TBS OIL IN LARGE NONSTICK SKILLET OVER MEDIUM HIGH HEAT. ADD EGGS; COOK, STIRRING, UNTIL JUST COOKED THROUGH, 3-4 MINUTES. 2. IN SAME SKILLET, HEAT REMAINING 1 TBS OIL OVER MEDIUMHIGH HEAT. ADD GARLIC AND PEPPER; COOK STIRING, 3 MINUTES. ADD RICE. SPREADIN SKILLET; COOK 1 MINUTE; STIR, SCRAPING RICE FROM BOTTOMOF SKILLET, UNTIL BROWNED. 3. STIR BROCCOLI, AND REMAINING JUICE MIXTURE. COVER; COOK UNTILBROCCOLI IS TENDER, 5 MINUTES. STIR IN EGGS AND PORK MIXTURE. HEAT THROUGH; 2 MINUTES |
