Pork Fillet With Mozzarella

Ingredients:
olive oil
4 pork cutlets, pounded, about 6 ounces each
4 slices mozzarella cheese
2 tablespoons capers, rinsed
4 slices tomatoes
Directions:
1. Heat oil in skillet.
2. Season pork with salt and pepper.
3. Cook for 2 - 3 minutes on each side until browned.
4. Place a slice of cheese on each one, followed by a sprinkle of capers and a slice of tomato.
5. Cover and cook 6 - 7 minutes and cheese is melted.
