Great way to use up left over fat cut from pork chops. Ingredients:
2 pork chops, fat only, diced |
1 ounce parsley |
1 ounce mint |
1 ounce basil |
1 ounce chives, snipped |
1/2 tomato, chopped |
1 tablespoon balsamic vinegar |
2 tablespoons olive oil |
Directions:
1. Heat a frying pan and fry the pork fat for 8-10 mins til crisp and golden. 2. Drain on kitchen paper. 3. Dress the herb leaves, tomatoes and pork fat in the dressing of balsamic vinegar and oil for serving. |
