Pork Chops with Sweet Potatoes and Apples |

Ingredients:
1/2 teaspoon paprika |
1/4 teaspoon ground allspice |
1/8 teaspoon dried thyme |
1/4 teaspoon pepper |
1/4 teaspoon salt |
4 (4-ounce) boneless center-cut loin pork chops, trimmed |
cooking spray |
2 teaspoons vegetable oil |
1 cup thinly sliced onion |
1 small sweet potato, peeled and thinly sliced (about 1/2 pound) |
1 cup orange juice, divided |
1/4 teaspoon ground cinnamon |
1/4 teaspoon salt |
1 1/2 teaspoons sugar |
1/2 teaspoon worcestershire sauce |
1 apple, cut into wedges |
Directions:
1. Combine first 5 ingredients in a small bowl; rub evenly over both sides of pork. Let pork stand 15 minutes in refrigerator. 2. Heat a large nonstick skillet coated with cooking spray over medium-high heat. Add pork; cook 3 minutes on each side. Remove pork from pan. 3. Add oil to pan; reduce heat to medium. Add onion and sweet potato; sauté 7 minutes. Add 1/4 cup orange juice; cook until liquid evaporates, scraping pan to loosen browned bits. Add remaining orange juice, cinnamon, and next 3 ingredients; stir well. 4. Add reserved pork to pan; spoon onion mixture over pork. Top with apple. Simmer, uncovered, 7 minutes or until done, turning pork once. Serve immediately. |
