Pork Chops with Simple Pan Sauce |

A simple preparation of two pork chops, panfried, with a simple reduction pan sauce Ingredients:
12 oz pork, fresh, loin, center rib (chops), boneless |
1 tablespoon olive oil |
3 ounces lemon juice |
3 ounces chicken stock |
3 ounces dry white wine |
2 cloves garlic |
2 tablespoons parsley |
Directions:
1. Put oil in very hot pan and cook chops (2 6 ounce chops) until nicely browned; then turn and brown second side. Cook until done, then remove to plate and reserve in warm oven, covered with tinfoil 2. Add lemon juice, wine, and chicken stock to pan and scrape up brown bits; turn heat to high and reduce. 3. Just before proper reduction has been reached, add minced or sqeezed garlic and allow to cook until just fragrant, less than a minute. 4. Add parsley, remove from heat, and pour over chops. |
