Pork Chops With Plum-Berry Sauce |

Ingredients:
4 (6-ounce) bone-in center cut pork chops (1/2 inch thick) |
1/4 teaspoon salt |
1/4 teaspoon pepper |
cooking spray |
1/4 cup minced shallots |
1 cup beef consomm |
2 tablespoons balsamic vinegar |
1/2 teaspoon ground ginger |
6 purple plums |
2 tablespoons seedless blackberry spread (such as polaner all fruit) |
Directions:
1. Sprinkle pork with salt and pepper. 2. Heat a large nonstick skillet over mediumhigh heat until hot. Coat pork with cooking spray; add to pan. Cook 3 minutes on each side or until browned; remove from pan. Add shallots, and sauté until tender. Add consommé, vinegar, and ginger, stirring well. Cook, without stirring, over medium-high heat 5 minutes. 3. Remove pits from plums; slice plums. 4. Add fruit spread to pan, stirring until melted. Add pork to pan, and cook 5 minutes over medium-high heat or until done, turning once. Place pork on a serving platter. Add plums to sauce, and cook 3 minutes or until thoroughly heated. Spoon plum sauce over pork. |
