This dish is so easy and delicious! Chipotle peppers give the sauce an extra smoky kick. Serve with baked sweet potatoes and garlic green beans for a simple weeknight meal. Ingredients:
4 boneless thick-cut pork chops |
1 large onion, thinly sliced |
1/2 teaspoon salt |
1/2 teaspoon pepper |
1 tablespoon olive oil |
1/2 cup barbecue sauce |
1 tablespoon chipotle chile in adobo, diced |
1/4 cup chicken stock |
1 tablespoon worcestershire sauce |
Directions:
1. Season pork chops with salt and pepper. Brown in a skillet with olive oil over MEDIUM heat until cooked through (about 6 minutes per side, depending on thickness of the pork chops). Medium heat will ensure the outside gets brown and crusty while the center cooks thoroughly. 2. Remove pork chops to a separate plate, and add onions. Cook over medium heat until onions are caramelized (about 10-15 minutes), stirring frequently. 3. Add remaining ingredients and stir to combine. Let the sauce thicken over medium-low heat for about 5-10 minutes. 4. Return the pork chops to the sauce just to heat through, and serve. |
