Pork Chops with Avocado Salsa Ingredients:
1 lb pork chops, boneless 3/4 inch thick |
1 tbsp cumin seeds, slightly crushed |
1/2 tsp salt |
1/4 tsp pepper |
2 cloves garlic, minced |
2 tbsp vegetable oil |
4 oz tomatillo salsa or salsa verde |
1 scallion, coarsely chopped |
1 avocado, diced |
1/4 cup radishes, chopped |
1 tbsp cilantro |
Directions:
1. Trim fat from chops. Rinse and par dry. Combine cumin, 1/4 tsp salt, pepper and garlic. Rub mixture over chops. 2. In a large skillet heat oil over medium high heat. Add chops and cook 8 to 12 minutes, or until juice runs clear, turning once. 3. In food processor blend salsa, scallions and remaining salt until smooth. Transfer into a bowl and stir in avocado and cilantro. Serve over chops. |
