Pork Chops with Apricot Sauce |

With only a can of apricots and a couple of spices, you can transform ordinary pork chops into a sweet and saucy entrée. Ingredients:
1/2 teaspoon salt |
1/2 teaspoon ground ginger |
1/4 teaspoon black pepper |
4 (4-ounce) boneless center-cut loin pork chops (1/2 inch thick) |
2 teaspoons olive oil |
1 (15-ounce) can apricot halves in extra-light syrup |
Directions:
1. Combine first 3 ingredients, and sprinkle over both sides of pork chops. 2. Heat oil in large nonstick skillet over medium-high heat. Add pork, and cook 3 minutes on each side or until done. Remove pork from pan; set aside, and keep warm. 3. Drain apricots, reserving syrup. Add 6 tablespoons syrup to pan; cook over medium-high heat 4 to 5 minutes or until mixture is reduced by half, scraping pan to loosen browned bits. Reduce heat to medium. Add remaining 1/2 cup syrup and apricots; cook 5 minutes or until thoroughly heated. Serve sauce over pork. |
