I came up with this recipe years ago after seeing a pork roast prepared this way. I only had chops on hand, so I used chops instead. Ingredients:
8 pork chops, seasoned with salt, pepper, etc |
2 t cooking oil |
2 med-lrg onions, sliced |
2 large cooking apples, peeled/cored/sliced |
1 large bag/can sauerkraut, drained, rinsed |
1/2 c brown sugar |
1 t dry mustard |
1 t caraway seeds (optional) |
Directions:
1. Brown the chops, set aside. 2. Saute the onions in the pan the chops were browned in. Pour off extra oil first if the chops gave off a lot of fat while cooking. 3. Mix brown sugar, mustard, and caraway if using. 4. In a 9x13 pan, put a layer of chops (4), onions, apples, kraut and the brown sugar mixture. Repeat. 5. Add water to the pan to cover the bottom and cover with foil. 6. Bake 2 hours or until pork is very tender. |
