1 1/2 lbs ground lean pork or 1 1/2 lbs turkey |
2 (15 ounce) cans kidney beans, drained and rinsed |
2 (15 ounce) cans petite diced tomatoes (do not drain) |
1/2 cup chopped onion |
1/2 teaspoon ground cinnamon |
1/2 teaspoon ground cumin |
8 ounces kale or 8 ounces spinach, coarsely chopped |
salt and pepper |
Directions:
1. Cook pork in lightly greased large skillet until browned, about 10 minutes, crumbling with a fork. 2. Combine pork and remaining ingredients, except kale, salt and pepper, in slow cooker. 3. Cover and cook on low 6-8 hours, stirring in kale during the last 20 minutes. 4. Season to taste with salt and pepper. |
