1 sweet potato (500gms cut into 2cm cubes) |
500 g lean pork chops, deboned, cut into 4cm cubes |
400 g canned tomatoes, chopped |
1 garlic clove, crushed |
1/2 glass unsweetened orange juice (125ml) |
2 individual shallots, chopped (green parts only) |
1 teaspoon cumin seed |
1 1/2 tablespoons fresh lime juice |
2 tablespoons fresh coriander, chopped |
Directions:
1. Place the sweet potato, pork, tomatoes, garlic, orange juice, shallots and cumin in the base of a 5-litre capacity slow cooker. Season well with salt and pepper. Cover and cook on low setting for 7 hours. 2. Stir in the lime juice and coriander and cook for a further 5 minutes. Taste to season and serve with steamed beans or broccoli. |
