Pork And Sausage Jambalaya |

Actually, where l live is the Jambalaya Capital of the World. We have a festival every year! They cook chicken jambalaya there. This is another version of jambalaya! Hope you like it!..... Ingredients:
1 lb. of sausage( l use smoked pork sausage), cut into 1/2 inch slices |
1 lb. of lean cubed pork |
3 onions, chopped |
salt, pepper, creole seasoning (leblanc's) |
1 tsp. garlic powder |
6 cups of water |
3 cups of mahatma long grain rice |
Directions:
1. Spray pot with a nonstick spray 2. Cook sausage until almost done, remove 3. Add cubed pork, season with salt, pepper and creole seasoning 4. Brown the pork and remove 5. Add chopped onion and cook until onions are almost brown. 6. Add a little water if necessary. 7. Be sure to watch carefully so onions don't burn. 8. Add the sausage and pork back into the pot. 9. Mix well with onions 10. Add about 1 cup of water , cover and lower heat and let it cook for about 30 minutes. Watch it to make sure it doesn't burn. Stir occasionally. 11. Add 6 cups of water, and the rice. Add the seasonings to taste and the garlic powder. 12. When it comes to a boil, cover, lower heat and let it simmer for 20 mins. Fluff rice and cover and let it simmer for about 15 more mins. 13. Remove lid. Fluff the rice. 14. We serve this with potato salad and bread. (oh, and also a big pot of white beans goes well too!)
