Healthy pork tenderloin recipe with generous portions, especially if served with Jasmine rice. Ingredients:
2 lb pork tenderloin, cubed |
1 green bell pepper, bite size pieces |
2 red bell peppers, bite size pieces |
1 small onion, diced |
2 tsp basil (dried or fresh) |
1/4 c italian parsley, fresh, minced |
1/2 tsp salt |
1 tbsp pepper |
16 oz diced tomatoes, drained |
Directions:
1. Spray a pan with nonstick cooking spray, sear the pork tenderloin until brown on med-high heat, about 5 min, seasoning with salt and pepper. 2. Add the onion and peppers, stir until onion is translucent. 3. Add the diced tomatoes, bring to a boil. 4. Reduce heat, cover and simmer for 20 min or until pork is no longer pink inside. 5. Mix in basil and parsley last, just before serving. |
