Sweeten the pot with roasted red peppers. No time to shop? Open a jar of roasted red peppers and try one of these delicious dinners. Ingredients:
1 tablespoon vegetable oil |
1 pound ground pork |
1 onion, thinly sliced |
1 large garlic clove, smashed |
1 cup jarred roasted red peppers, drained and sliced |
1 1/4 cups chicken broth |
2 tablespoons soy sauce |
2 teaspoons cornstarch |
1 tablespoon oyster sauce |
8 ounces sliced water chestnuts |
Directions:
1. Heat oil in a large nonstick skillet. Add pork and cook over medium-high heat until it's no longer pink. Transfer to plate. 2. Stir-fry onion and garlic for 1 minute. Add peppers; stir-fry until onions are tender. In a cup, mix broth, soy sauce and cornstarch. Add to vegetables and stir-fry until thickened, 2 to 3 minutes. Stir in oyster sauce and water chestnuts and cook until heated through, 1 to 2 minutes. |
