Ingredients:
1 pound lean boned pork loin roast
1 (16-ounce) jar thick-and-chunky salsa
2 (15-ounce) cans no-salt-added black beans, undrained
1 cup chopped yellow bell pepper
3/4 cup chopped onion
1 teaspoon ground cumin
1 teaspoon chili powder
1 teaspoon dried oregano
1/4 cup fat-free sour cream
Directions:
1. Trim fat from pork; cut pork into 1-inch pieces. Combine pork and next 7 ingredients in a 4-quart electric slow cooker; stir well. Cover with lid; cook on low-heat setting 8 hours or until pork is tender. Ladle chili into bowls; top with sour cream.
2. Note: Dietary fiber is an important component of a healthy diet. And many high-fiber foods, like beans and bell pepper, are packed with beneficial vitamins and minerals. The above slow-cooker recipe is an easy way to get a good start on the daily recommended intake of 25 to 30 grams of fiber.
