Pork-and-Black Bean Chili |

Ingredients:
1 pound lean boned pork loin roast |
1 (16-ounce) jar thick-and-chunky salsa |
2 (15-ounce) cans no-salt-added black beans, undrained |
1 cup chopped yellow bell pepper |
3/4 cup chopped onion |
1 teaspoon ground cumin |
1 teaspoon chili powder |
1 teaspoon dried oregano |
1/4 cup fat-free sour cream |
Directions:
1. Trim fat from pork; cut pork into 1-inch pieces. Combine pork and next 7 ingredients in a 4-quart electric slow cooker; stir well. Cover with lid; cook on low-heat setting 8 hours or until pork is tender. Ladle chili into bowls; top with sour cream. 2. Note: Dietary fiber is an important component of a healthy diet. And many high-fiber foods, like beans and bell pepper, are packed with beneficial vitamins and minerals.
