Grilled pork tenderloin is excellent in this recipe, but chicken or ham can also be used. The salad should be made ahead, and refrigerated so all the flavors can blend evenly. Ingredients:
1 cooked pork tenderloin |
6 apricots, quartered |
1 small red sweet pepper, seeded and diced |
1 small spanish onion, halved and thinly sliced |
1/4 cup toasted slivered almonds |
1 tsp curry powder |
zest and juice of 1 lime |
pinch of chili powder, or more if you prefer |
1/2 cup plain yogurt |
salt and pepper |
2 tbsp chopped mint |
Directions:
1. slice the pork tenderloin and place in a serving bowl 2. add the apricots, red pepper, and onion 3. add the almonds 4. in a small bowl, mix the curry powder, lime zest, lime juice 5. add the chili powder to your preferred taste 6. stir in the plain yogurt 7. pour the yogurt dressing over the mixture, and toss to mix 8. season with salt and pepper 9. stir in the chopped mint 10. cover and refrigerate for at least 1 hour before serving |
