Porcupine Meatballs Ala Sooz |

These are delicious everyone in my family loves them. I either serve them over mashed potatoes or over noodles. Definitely a kid pleaser and adults will love this dish too! Ingredients:
1 lb ground beef, shopping list |
1/4 cup rice, uncooked |
1 egg, slightly beaten |
1/4 teaspoon onion powder |
1/4 teaspoon garlic powder |
salt and pepper, to taste |
2 (10 1/2 ounce) cans tomato soup, divided |
1 cup water |
2 teaspoons worcestershire sauce |
Directions:
1. Combine ground beef, rice, egg, onion powder, garlic powder, salt, pepper, and 1/4 cup of the tomato soup. Mix well. 2. Shape mixture into about 20 small meatballs. 3. Place meatballs in a large soup pan with a lid. 4. Mix rest of soup, water, and Worcestershire in a small bowl; pour over meatballs. 5. Bring to a boil. 6. Reduce heat; cover; and simmer 30 - 40 mintes or until meatballs are cooked and rice is soft, stirring often. 7. Serve over rice, mashed potatoes, or even egg noodles. |
