Porcupine Balls (Meatballs) |

Tomatoe based meatballs. They're called 'Porcupine Balls' because of the rice that is cooked in them. Funny name but yummy to eat. Ingredients:
1 lb ground beef |
1/2 cup uncooked instant rice |
1/4 cup finely chopped onion |
1 teaspoon salt |
1/4 teaspoon pepper |
1/4 teaspoon ground sage |
2 tablespoons vegetable oil |
1 cup water |
2 (8 ounce) cans tomato sauce |
Directions:
1. Mix rice, onion, salt, pepper, and beef. 2. Roll into small balls. 3. Put 2 tablespoons of vegetable oil in skillet, heat, and slightly brown balls. 4. Put water and tomato sauce over balls. 5. Cover and simmer for about 45 minutes. |
