This salad is an amazing and wonderful salad. It was first brought to my attention by my to-be sis in law, Sara. Ingredients:
for the greens |
1 bunch of spinach, washed |
1 bunch of romaine hearts, washed |
1 package of strawberries, washed and sliced |
1 small red onion, very thinly sliced, save about 1/8 of it and chop finer to add to vinaigrette later. |
for the vinaigrette |
1/3 cup sugar |
3/4 cup mayonnaise |
2 tbsp raspberry vinegar or raspberry dressing |
2 tbsp. poppy seeds |
(add smaller cut onions from above) |
feel free to add toasted walnuts or pecans, and a few smidges of goat cheese if you like. |
Directions:
1. Toss all greens into a bowl with onions 2. Whisk together the vinaigrette ingredients 3. Pour dressing in a little at a time, you just want enough to coat the leaves 4. Enjoy |
