Just made these muffins last night and was quite pleased with the result. Husbands comment was sensational . They are quite moist and had a lovely flavor but I think they would be even better with a bit of lemon added. Read more . Another bonus is they were very quick to make. Ingredients:
2 cups all-purpose flour |
3 teaspoons poppy seeds |
1/2 teaspoon salt |
1/4 teaspoon baking soda |
1 cup sugar |
1/2 cup butter |
2 eggs |
1 cup plain yogurt |
1 teaspoon pure vanilla extract |
Directions:
1. In small bowl, stir together flour, poppy seeds, salt and baking soda. 2. In large bowl, cream together sugar and butter. 3. Beat in eggs, one at a time. 4. Beat in yogurt and vanilla until well blended. 5. Stir in flour mixture until moistened thoroughly. 6. Spoon batter into greased muffin tins. 7. Bake at 400 degrees for 15-20 minutes or until a wooden pick inserted in center comes out clean. 8. Cool muffins on wire rack for 5 minutes before serving. |
