Poppy Seed Peach Muffins

These tasty muffins use can quickly be made even when peaches are not in season because they use a jar of peach baby food. They come out so moist they practically melt in your mouth.
Ingredients:
1/2 cup butter, plus
2 tablespoons butter, softened
1 cup sugar
2 eggs
1 teaspoon vanilla extract
1 1/4 cups all-purpose flour
2 tablespoons poppy seeds
1 teaspoon baking soda
1/4 teaspoon salt
1 (6 ounce) jar peach baby food
Directions:
1. In a mixing bowl, cream butter and sugar.
2. Add eggs and vanilla; mix well.
3. Combine the flour, poppy seeds, baking soda and salt.
4. Add to the creamed mixture alternately with baby food.
5. Fill paper-lined muffin cups two-thirds full.
6. Bake at 350 degrees for 20-25 minutes or until a toothpick inserted in center of muffin comes out clean.
