Ingredients:
1 (18.5-ounce) package yellow cake mix with pudding |
2/3 cup vegetable oil |
2/3 cup apricot nectar |
4 large eggs |
1/3 cup poppy seeds |
1/2 teaspoon grated lemon rind |
2 1/2 tablespoons fresh lemon juice |
Directions:
1. Combine all ingredients, stirring until blended. Spoon into greased muffin pans, filling two-thirds full. 2. Bake at 400° for 18 to 20 minutes or until golden brown. Remove from pans immediately, and cool on wire racks. |
