Poppy Seed-honey Dressing |

I found this in The New Joy of Cooking cookbook, and it has become known among friends as How I get my kids to eat spinach. It's delicious on baby spinach with dried cranberries and slivered almonds. Ingredients:
1/4 cup honey |
3 t. cider vinegar or other fruit vinegar (i use raspberry vinegar) |
2 t. olive oil |
1 small shallot, minced (i use dry shallots - you could also use regular dried minced onion) |
2 tsp. dijon or brown mustard |
1 tsp. poppy seeds |
salt and pepper to taste |
Directions:
1. Shake all ingredients in a jar with a tight-fitting lid until well blended. |
