                     Don't let the ingredients scare you off, this is refreshing and sweet, but not too sweet, and with less oil than most dressings. better on fruit IMHO.  Ingredients: 
                    
                        
                                                1 large peach, pitted  |  
                                                1/4 cup sugar  |  
                                                1/4 cup apple juice  |  
                                                2 tablespoons cider vinegar  |  
                                                2 teaspoons chopped onions  |  
                                                1/2 teaspoon ground mustard  |  
                                                1/4 teaspoon salt  |  
                                                1 tablespoon olive oil, vegetable will work too  |  
                                                1 tablespoon poppy seed  |  
                                                
                     
                    Directions: 
                    
                        
                            
                                1. Place peach in blender, run blender until peach is smooth. 2. Add next 6 ingredients, process until blended, add oil and run blender for about a minute. 3. Stir in poppy seeds last. 4. Serve over any kind of fruit or even spinich salad, but our favorite is cantalope and blueberries!                              |
