Poppy Seed Fruit Dressing

Don't let the ingredients scare you off, this is refreshing and sweet, but not too sweet, and with less oil than most dressings. better on fruit IMHO.
Ingredients:
1 large peach, pitted
1/4 cup sugar
1/4 cup apple juice
2 tablespoons cider vinegar
2 teaspoons chopped onions
1/2 teaspoon ground mustard
1/4 teaspoon salt
1 tablespoon olive oil, vegetable will work too
1 tablespoon poppy seed
Directions:
1. Place peach in blender, run blender until peach is smooth.
2. Add next 6 ingredients, process until blended, add oil and run blender for about a minute.
3. Stir in poppy seeds last.
4. Serve over any kind of fruit or even spinich salad, but our favorite is cantalope and blueberries!
