Poppy Seed Dressing In The Blender |

This is the dressing I make for the Spinach Romaine salad. It goes together so quickly, and while I've never tried to make it in anything but a blender, I'm thinking it could probably be done just as easily in a food processor, too. Read more . It keeps very nicely in the refrigerator for several weeks. While it's definitely high on the fat, it is one of the best dressings I've found for a spinach salad, and a little goes a long ways, so you don't need a lot of it to get the rich, sweet flavor. Ingredients:
3/4 cup sugar |
1 teaspoon dry mustard |
1 teaspoon salt |
1/3 cup cider vinegar |
1 small onion, chopped (optional) |
1 cup vegetable oil |
2 tablespoons poppy seeds |
Directions:
1. Place all ingredients, EXCEPT OIL AND POPPY SEEDS, in a blender. 2. Through the top of the blender, gradually pour in the oil, while running the blender on medium/high. 3. Mixture will thicken as the oil is blended in. 4. When thickened, add the poppy seeds and process just until mixed into the dressing. 5. This dressing will keep for a long time in the refrigerator, in a covered container. |
