This goes wonderfully with spinach and fresh strawberry salad or any kind of fresh greens, with or without fruit. Especially delicious with grilled chicken slices over the greens for an elegant dinner salad. And it's so simple to make! The cooking time is actually time spent in the refrigerator to let the flavors develop. I use a Splenda-type sugar substitute instead of sugar, making this a great dressing for diabetics. Ingredients:
1/4 cup white balsamic vinegar (or other white vinegar) |
1/3 cup mild olive oil |
1/2 cup sugar (such as splenda) or 1/2 cup sugar substitute (such as splenda) |
2 teaspoons poppy seeds |
Directions:
1. Measure all ingredients into a small container with a tight fitting lid. 2. Shake vigorously to thoroughly mix. 3. Store in refrigerator. |
