Poppin Fresh Barbecue Cups |

Quick and yummy snack or great for lunch with a side salad. Ingredients:
1 lb ground beef |
1 tablespoon minced onion (instant or fresh) |
1 -2 tablespoon brown sugar |
1 (12 ounce) can of refrigerated flakey biscuit dough |
2 ounces shredded cheddar cheese |
1/4 cup barbecue sauce |
Directions:
1. Preheat oven to 400°F. 2. Grease 10 muffin cups. 3. Brown ground beef in lg skillet, drain. 4. Stir in barbecue sauce, onion and brown sugar. 5. Cook 1 min to blend flavors while stirring constantly. 6. Separate biscuit dough into 10 biscuits and place one into each greased muffin cup, firmly pressing in bottom and up sides forming a 1/4 inch rim. 7. Spoon about 1/4 cup meat mixture in each biscuit lined cup. 8. Sprinkle with cheese. 9. Bake 400°F 10-12 minutes until edges are golden brown. 10. Cool 1 minute Remove from muffin pan. 11. *To make ahead, prepare as directed, cover and refrigerate up to 2 hours and bake. |
