My chicken breaders have been a family secret for about 25 years. After much pressure from family and friends I’m releasing this recipe. I guess I shouldn’t take it with me to the grave…oh, to my family and friends “this is not the recipe I use for the fishing trips, you’ll just have to wait a little longer for that one” Ingredients:
2 cups all-purpose flour |
1 cup yellow corn meal |
1/2 cup soy flour |
1/3 cup powder milk (ground very fine) |
2 tablespoons corn starch |
1 teaspoons baking soda |
1 tablespoon poultry seasoning |
2 tablespoon sea salt (ground very fine) |
2 teaspoons nu-salt (potassium chloridekcl) |
2 teaspoons paprika |
2 teaspoons dry mustard |
2 teaspoons garlic salt |
1 1/2 teaspoons black pepper |
1/2 teaspoon cayenne pepper |
Directions:
1. Mix all the ingredients in a 1-gallon zip lock bag by inverting the bag for about a minute. 2. Dip chicken in egg or egg substitute then, coat with chicken breader by shaking together In plastic bag or rolling pieces in breader on plate. Deep fry or pan-fry at 325 to 350 until golden brown. |
