From The Pooh Cookbook. This won Best Album of the Year 1969! -Tasty- enjoys the popovers served with scrambled egg and fresh strawberries! Note: agave nectar can be substituted for the honey if serving popovers to children under 2 years old.
Ingredients:
1/3 cup whipped butter
1 tablespoon honey (we tried and liked blackbeary)
1 cup unbleached flour
1/2 teaspoon salt
3/4 cup milk or 3/4 cup cream
1 tablespoon butter, melted
2 tablespoons honey, softened
2 eggs
Directions:
1. Preheat oven to 425 degrees.
2. Grease muffins tins.
3. Stir together the butter and honey and set aside.
4. Sift the flour and salt into a mixing bowl.
5. Combine milk, butter and honey and add to the flour.
6. Stir to combine.
7. Add the eggs and beat until smooth.
8. Fill the muffin tins half full.
9. Bake approximately 18 minutes* but **DO NOT** open the oven door or the popovers will collapse (you want to save the collapsing for later!). *The original directions read 25-30 minutes cooking time. Adjust accordingly.
10. Remove from oven. The popovers will collapse in the center in about 1 minute, usually less time.
11. Remove from the muffin pans.
12. To serve, turn the popover upside down and slather with the honey butter.
13. Puh-Puh-Puh-Piglet, ~Tasty~ and Pooh enjoy their morning smackerel!
