This method for making popovers works well in high altitude areas. We like these served with soup. Source: The New High Altitude Cookbook. Ingredients:
2 extra large eggs |
1 cup milk |
1 cup sifted flour |
1/2 teaspoon salt |
Directions:
1. Preheat oven to 450-degrees F. 2. Grease popover pan (or use large muffin tins). 3. In a large bowl beat eggs and milk together. 4. Sift flour and salt together. 5. Add dry to wet ingredients. 6. Heat pans in oven for 3 minutes. 7. Pour batter into pre-heated popover pan, filling cups half full. 8. Bake at 450-degrees F for 15 minutes. 9. Reduce temperature to 350-degrees F and bake 20 minutes longer. 10. DO NOT OPEN OVEN DOOR WHILE BAKING. |
