1. Popeye's Red Beans & Rice 2. Serves/Makes: 8 3. cup chopped onions 4. /2 cup chopped celery 5. tablespoons minced garlic 6. ounces andouille sausage, cut into 2 ounce links 7. bay leaves 8. /4 teaspoon black pepper 9. teaspoon dried thyme 10. /2 teaspoon cayenne 11. teaspoon salt 12. ham hock 13. pound red beans, soaked and drained 14. cups chicken stock 15. cups cooked white long grain rice, warm 16. Garnish: 17. tablespoons chopped green onions and Essence 18. Crusty loaf of bread 19. In a stock pot, saute the onions, celery, and garlic for 1-2 20. minutes. Add the sausage, bay leaf, black pepper, thyme, 21. cayenne, and salt, saute for 2-3 minutes. Add the ham hock and 22. beans. Cover the mixture with the stock. Bring up to a boil and 23. reduce heat to a simmer. Cook the bean mixture for 2 hours or 24. until the beans are tender. 25. Mash 1/4 of the mixture against the side of the pot with a 26. spoon. Re-season with salt and pepper if needed. Remove the ham 27. hock and slice the meat off the bone. To assemble, spoon the 28. warm rice onto the serving bowl. Ladle the bean mixture right 29. over the top. |
