Popeye's Breakfast Sammy

This breakfast sandwich is a yummy variation of the egg, meat and cheese we are used to with a little something extra....that being spinach!
Ingredients:
1 english muffin
1 egg
2 slices cooked bacon
1 slice swiss cheese (or could use shredded parmesan or feta cheese)
4 baby spinach leaves
1 teaspoon butter
pepper (optional)
Directions:
1. Heat up a non-stick skillet on medium-high and melt teaspoon of butter or spray with non-stick spray.
2. Place the slices of cooked bacon in the pan and let them start to get warm while you toast your english muffin.
3. Crack the egg right on top of the bacon slices and cook how you like or until done (you could leave the yolk a little soft if you like).
4. Place the spinache leaves next to the egg in the pan, then place the cooked egg on top of them so they get a little wilted.
5. Place the egg with the spinach on top of it on the english muffin and top with a piece of swiss cheese, shredded permesan or feta crumbles.
6. Put the lid on the sandwich and enjoy your grown up breakfast sandwich!
