A quick low-cal, high protein breakfast. For added calcium/protein, increase Egg Beaters to 1/2 cup and sprinkle with low-fat cheese. Ingredients:
1/4 cup egg beaters |
1/2 cup spinach |
1/4 cup chopped onion |
1 tsp garlic |
1/2 tbsp olive oil |
Directions:
1. Heat oil over med-high flame. 2. Saute onion and garlic for 3-5 minutes, until slightly caramelized. 3. Add spinach. 4. Add Egg Beaters and heat until solid. 5. (If making the night before, complete steps 1-4 and refrigerate ingredients. In the morning, simply place the ingredients and 1/4 cup Egg Beaters in a cup/bowl, heat 1 1/2 minutes in the microwave, and enjoy!) |
