My mom made this when I was growing up and I don't think my dad ever found out it used ground turkey instead of ground beef. My grandfather used to make this because he was watching his fat and cholesterol after heart surgery. Ingredients:
2 tablespoons vegetable oil |
1 1/2 cups chopped onions |
1 cup chopped celery |
3 garlic cloves, minced |
1 1/4 lbs ground turkey |
2 (15 ounce) cans tomato sauce |
1 1/4 teaspoons chili powder |
1 teaspoon ground cumin |
2 (15 ounce) cans red kidney beans |
salt and pepper |
Directions:
1. Heat oil and saute onion, celery, and garlic until onion is golden. 2. Add turkey, saute until turkey is no longer pink, breaking it up into small pieces as it cooks. 3. Add tomato sauce, chili powder, and cumin and stir. 4. Bring to a boil, reduce to low, cover and simmer 20 minutes, stirring occasionally. 5. Mix in beans, salt, and pepper (to taste). 6. Cover and simmer 30 minutes. |
