Pop Pop's Roast Leg of Lamb |

This recipe was given to me by my father-in-law back when I was first married. Cooking time is approximate and depends on your oven and that's why I always use a digital meat thermometer to prevent tears. Ingredients:
6 -8 lbs leg of lamb (bone-in) |
2 garlic cloves |
1 tablespoon olive oil |
1 1/2 teaspoons savory |
1 teaspoon rosemary |
1 teaspoon salt |
3/4 teaspoon ground pepper |
Directions:
1. Preheat Oven to 400°F 2. Score 1/4 inch deep diamonds in lamb. 3. Mash & chop garlic into fine peices and mix together with olive oil, savory, rosemary, salt & pepper. 4. Insert and rub mixture all over lamb. 5. Reduce oven temperature to 325° and bake about 6. 30-35 minutes per pound for a 6-8 lb. roast. 7. Or use a digital meat thermometer. (Take roast out of oven when thermometer reaches 130 degrees F and let rest for 20 minutes: Roast will continue to cook while resting. Keep thermometer in roast while it is resting and when it reaches desired doneness, you may carve the roast.). 8. Enjoy! |
