This recipe is best when angel hair shredded cabbage is used. Angel hair refers to a fine shred (1mm) as opposed to the standard shred (3mm) found in most groceries. If your mandolin or shredder does not have a blade or setting that fine I recommend Dole Angel Hair Coleslaw Mix in the bag.
Ingredients:
6 cups green cabbage, finely shredded
1/2 sweet onion, finely sliced
1 large carrot, coarsely grated
1 stalk celery, finely sliced
1 teaspoon celery seed
1 tablespoon dried chives
2 tablespoons dried parsley
1 teaspoon garlic powder
1 tablespoon black pepper, coarsely ground. (to taste)
2 cups mayonnaise
1/4 cup yellow mustard or 1/4 cup dijon mustard
1 tablespoon worcestershire sauce
1 tablespoon white sugar or 4 (1 g) packets splenda sugar substitute
1 tablespoon salt (to taste)
Directions:
1. Combine shred mix ingredients thoroughly. Cover and set aside while preparing dressing. Mix dressing ingredients until sugar and salt are incorporated. In a 3 quart mixing bowl slowly combine dressing and shred mix until quite wet. Cover and place in refrigerator for 24 hours. Enjoy with BBQ, hamburgers, hotdogs of any favorite meal.
