This recipe is perfect for those of us who cook for ourselves and can't afford ingredients and get really mad at Emeril and Ina for always using pricey things! This is cans cans cans, the money goes into the dressing-fresh basil and lemon are the essences of long awaited summer holiday Ingredients:
1 can red kidney beans |
1 can canelli beans |
1 can good water packed tuna fish |
1 1/2 cup or so cooked al dente brown rice, cooled |
juice of half a large lemon |
2 tbs chopped fresh basil |
salt |
pepper |
Directions:
1. Drain and rinse beans, mix with drained tuna in medium bowl 2. add cooked rice 3. in little dish whisk lemon juice, basil, salt, and pepper 4. drizzle and mix to coat-don't crush the beans! 5. and you are done my friend. |
