I love this dip with Nachos in the summer time. And....it's healthy for you too! Very yummy! Ingredients:
2 large avocados, peeled, pitted and chopped |
3 tomatoes, chopped |
1 bunch green onions, chopped |
1 14.5 oz. can black beans, rinsed and drained |
1 11 oz. can mexicorn, drained |
1/4 cup red wine vinegar |
1/4 cup canola oil |
hot pepper sauce to taste |
Directions:
1. Stir together avocados, tomatoes, green onions, black beans and corn. Stir in red wine vinegar, canola oil and hot pepper sauce. Cover, and chill 1 hour. Keeps for a couple of days! |
