Ingredients:
2 15 ounce cans of black-eyed peas with jalapeno chile peppers, rinsed and drained
1 chopped red sweet pepper
1/2 cup of chopped sweet onion
1/2 cup clipped fresh parsley
1 teaspoon bottled mince garlic
1/2 teaspoon salt
1/8 teaspoon of black pepper
1/4 cup olive oil
1/4 cup rice vinegar or white vinegar
1 bottle of wine of your choice
Directions:
1. Open wine, pour in glass and proceed to drink.
2. In a large bowl combine black-eyed peas, sweet pepper, sweet onion, parsley, garlic, salt and black pepper. Add oil and vinegar; toss gently to coat
3. Cover and chill for 2 least 1 hour or up to 24 hours.
4. Serve with tortilla chips.
