2 15 ounce cans of black-eyed peas with jalapeno chile peppers, rinsed and drained |
1 chopped red sweet pepper |
1/2 cup of chopped sweet onion |
1/2 cup clipped fresh parsley |
1 teaspoon bottled mince garlic |
1/2 teaspoon salt |
1/8 teaspoon of black pepper |
1/4 cup olive oil |
1/4 cup rice vinegar or white vinegar |
1 bottle of wine of your choice |
Directions:
1. Open wine, pour in glass and proceed to drink. 2. In a large bowl combine black-eyed peas, sweet pepper, sweet onion, parsley, garlic, salt and black pepper. Add oil and vinegar; toss gently to coat 3. Cover and chill for 2 least 1 hour or up to 24 hours. 4. Serve with tortilla chips. |
