All you need is a hand wand for this recipe. If you don't have one you can use a potato masher or food processor but it will be harder to get smooth texture and make a huge mess. This is great with my other Tex-Mex foods. Makes excellent burritos. Ingredients:
1 (16 ounce) package dried pinto beans |
salt, to taste |
1 teaspoon garlic powder |
1 (1 1/4 ounce) package taco seasoning |
Directions:
1. Soak beans over night and cook according to package instructions. 2. Salt beans to taste. 3. Once beans are done, add taco seasonings and garlic powder and cook for 10 additional minutes. 4. Drain beans and reserve juice. 5. With hand wand puree beans until smooth, adding reserved juice to get desired consistency. 6. You can top with cheese if desired. |
