Chop tomatoes in food processor. Try 1/2 broth, 1/2 wine. Use 1T dry basil if no fresh. Try adding mushrooms, grated zucchini, chicken, or shrimp. Can also add 2T cream for richer sauce.
Ingredients:
1/4 cup olive oil
1/2 onion, chopped
4 cloves garlic, minced
2 cups tomatoes (roma), diced
2 tablespoons balsamic vinegar
10 3/4 ounce low-sodium chicken broth
2 tablespoons chopped fresh basil
1/4 cup grated parmesan cheese
1 crushed red pepper to taste
1 freshly ground black pepper to taste
Directions:
1. Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 minutes or until al dente; drain.
2. Pour olive oil in a large deep skillet over high-heat. Saute onions and garlic until lightly browned.
3. Reduce heat to medium-high and add tomatoes, vinegar and chicken broth; simmer for about 8 minutes.
4. Stir in red pepper, black pepper, basil. Simmer for about 5 more minutes and serve over pasta topped with grated cheese. (Can also stir cooked pasta into sauce and simmer all together, then serve topped with the cheese. That's what the recipe called for.)
