Pomegranate Spinach Salad |

Something different and healthy! Ingredients:
1 (6 ounce) package baby spinach |
1/2 cup low-fat swiss cheese |
1/3 cup slivered almonds, toasted |
1/2 cup pomegranate seeds |
3 tablespoons canola oil |
2 tablespoons sugar |
2 tablespoons vinegar |
1/4 teaspoon poppy seed |
1/4 teaspoon salt |
1/8 teaspoon ground mustard |
Directions:
1. In a salad bowl, combine spinach, cheese, almonds, and pomegranate seeds. In a blender, combine the oil, sugar, vinegar, poppy seeds, salt, and mustard. Process until blended. Just before serving, drizzle dressing over the spinach and toss to coat. |
